Quick Clean Eating Breakfast

Breakfast can be pretty routine for some and if we are not careful we pack extra empty calories with

  • sugar loaded lattes
  • bagel and cream cheese
  • bacon and egg sandwiches
  • “the muffin man”
  • or simply black coffee all morning, nothing else

My cooking clean dishes with SimpleChef is back to graciously help you make better choices.  Besides, I’ve been missing my creative cooking a lot.  I went on a little shopping spree this past weekend and bought mini-muffin pans – not to bake muffins – you’ll see next week.  I also bought preparation bowls with measurements (cup, 1/2 cup etc…) and a lovely plate to take nice pictures of the meals I will be sharing with you.  If I didn’t run out of TJMaXX, I know my wallet would’ve dialed 911 and get me arrested.

My goal is to cook ONLY clean or I should say cleaner dishes. Some of my readers have shared with me that it is a big struggle for them, I hope the new clean recipes will SIMPLIFY your meal prep and help you get creative too while keeping your meals CLEAN.  To start, I made this week a quick clean eating breakfast.


  • 6 egg whites
  • 3 cup spinach
  • 1 clove garlic
  • 2 ounces fresh tomatoes diced
  • 1 slice Ezekiel bread Cinnamon Raisin (or the flavor you prefer)
  • olive oil cooking spray
  • 1 tsp extra virgin olive oil

One:  Start by wilting the spinach by heating 1 tsp of olive oil on a small skillet on medium heat.  Add the garlic and let it cook for 10 seconds.  Add the spinach and let it cook for seconds.

Two:  Add the tomatoes over the spinach and let it cook for only 10 seconds

Three: Bring the skillet back to medium heat.  Spray some cooking spray, add the egg whites and let it cook and stir frequently for 15 seconds.  Don’t let the eggs get too dry.

Four: Toast your Ezekiel bread and Voila!

    • The rest of my day gets complicated too if I don’t prepare my meal ahead of time and take it with me. I love leek and would love to try your leek & Potato spring soup although Spring is not quite here yet.

  6. I go back & forth with breakfast. I don’t eat it or I do and its cereal or I do and its something savory. But spinach egg & tomatoes I can do. I also love eggs & pepper too!
